I love traditional alfredo pasta. Specifically, I love fettuccine alfredo. What I don’t love as much is the incredible amount of fat from heavy cream and butter and a calorie count that easily meets or exceeds my daily recommended intake. I’m not exaggerating here – Alfredo dishes served at restaurants can easily top 2,000 calories per entree. Creamy pasta is comfort food, even if the nutrition profile is far from comforting, and the week I concocted this recipe was pretty stressful. While I’m not quite ready to talk about it in public forum, I will say I desperately needed comfort food and I also needed a PROJECT to take my mind off of things, hence, Guilt Free Vegan Alfredo Pasta was born.…

Sometimes, I feel like I get into a bit of a food rut. I make a LOT of dishes with carrots and cucumbers, okay? While they’re undoubtedly good for me, sometimes I want to break away from the foods I normally reach for, and try something NEW. Thus, here is Part 1 of my new recipe series that I’m lovingly dubbing “Stranger Foods” – where I choose a food item that I or others may have felt unfamiliar with or a bit intimidated by (or just plain don’t know what on earth to do with!) , and try to make something delicious out of it. You know that moment when you say something at the same time your friend or spouse says the exact same thing? Those “same wavelength moments” are a little funny/spooky, right? Everyone involved giggles a little…maybe a little nervously. That’s how I ended up making these Asian Lettuce Wraps with Crispy Baked Tofu. This Cajun Red Beans and Rice recipe should really be named “Cajun Inspired Red Beans and Rice”. I say this because a) I’m not Cajun b) I don’t live in Louisiana, and c) True Cajun food should (I think) involve home cooked and spiced DRIED beans that you simmer on the stove with seasonings and vegetables. I love using dried beans. Beans freshly simmered on the stove can impart a different texture and flavor than the canned variety. That being said, a lot of my recipes are conceived at the last minute (read: the day of, around 4:30 pm, when I remember that I’m expected to eat dinner as a normal human being), and I usually don’t have a pot of beans already soaked, cooked and ready.

Are you worried that, after days of refusing to consume anything wasn’t associated with their favorite cartoon character, your child will develop scurvy and child services will totally blame you? What if I told you that, armed with this Vegan Mac and Cheese recipe you can have the best of both worlds – delicious, creamy comfort food AND a nice serving of vegetables (that doesn’t taste like a serving of vegetables?)
